Sometime during the early 1980’s Cajun and Creole foods began to make their way out of the bayous of southern Louisiana and onto the menus of restaurants across the country. They rapidly became popular with many.
When I began to experiment with flavors, I bought many different brands of both Cajun and Creole seasonings; but none was quite right, so I determined to create my own version.
An unusual combination of spices, Tejun truly delivers that “South Louisiana Flavor,” and livens up every recipe, evoking that “cooked down on the bayou” flavor.
Excellent for grilling or baking fish (my personal favorite is on Orange Roughy). Adds a distinctive flavor to hamburgers; is great on cottage cheese (another ‘personal favorite’ use) and adds extra flavor to all bean dishes.
Used on a roast cooked in the oven, it recreates the country flavor I remember when I was a young boy working as a harvest hand and we were fed by the lady of the house.
