Continuing to look for original tastes, I decided to create a combination of ingredients that would mimic the flavors of Southeastern Cuba. In a two-year sojourn there over 50 years ago, I came to appreciate the distinctive flavors of Cuban cooking.
In Guantanamo City there was a small family restaurant where the proprietress would prepare huge steaks on a brazier in an open courtyard just outside the dining area. The aroma would permeate the whole place and add to the enjoyment of the meal.
Cuban will introduce you to the distinguishing flavor of food that, at least in those days, could be found there.
After completing the first formulation of spices I tested it on a steak prepared on my grill. The smell and taste took me back to those years I spent in Cuba.
Not only is it great for steaks on the grill, but also for roasts in the oven and all other meats. Used in moderation, it is great in stews and soups, vegetables and salads and just about any other recipe to which you want to add some pizzazz.
