The land that once was totally isolated from the rest of the world is now the second leading exporter of beef. Grown mostly in the eastern portion of the continent, Australia is the second largest exporter, responsible for 18% of the total beef exported throughout the world.
And any people who grow such an enormous number of cattle tend to eat a great portion also, and beef cooked over open pits are a tradition on the ranches.
A great variety of hardwoods grow throughout the land, several of which are used in the grilling of meats. Two of the most often used are the native desert oak and gidgee woods. Used separately or as a combination, they add a distinct flavor to the foods being cooked.
Since we do not have a comparable wood in the United States, I developed an unusual combination of spices to mimic the flavor of cooking in the outback.
Combining nineteen spices, the flavors will equal the food to be found in the finest restaurants in the land.
